Zucchini Mushroom Patties

Description These crispy zucchini and mushroom patties are the perfect complement to a Mediterranean meal. They also make a great lunch!

  • 1 1/2 cups zucchini, grated
  • 1 cup mushrooms, finely chopped
  • 2 eggs, beaten
  • 1/4 cup onion, finely chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • salt to taste
  • 2 tablespoons vegetable oil

Methods/steps

  1. In a medium bowl, combine the zucchini, mushrooms, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt. Stir well.
  2. Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.
