Zucchini Mushroom Patties |

Description
These crispy zucchini and mushroom patties are the perfect complement to a Mediterranean meal. They also make a great lunch!
Ingredients
- 1 1/2 cups zucchini, grated
- 1 cup mushrooms, finely chopped
- 2 eggs, beaten
- 1/4 cup onion, finely chopped
- 1/2 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- salt to taste
- 2 tablespoons vegetable oil
Methods/steps
- In a medium bowl, combine the zucchini, mushrooms, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt. Stir well.
- Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.
