Description
This tangy tomato soup with garlic and fresh basil is easy and quick to make. The perfect meal on a cold winter day!
Ingredients
- 1 tomato, chopped
- 1/2 medium white onion, coarsely chopped
- 1 clove of garlic, minced
- 2 leaves fresh basil, chopped
- 1 cup tomato-vegetable juice cocktail
- salt and pepper to taste
Methods/steps
- In a food processor or a blender, puree the tomato, onion, garlic, and basil.
- Transfer the mixture to a small saucepan, and stir in the vegetable juice. Season to taste with salt and pepper.
- Bring to a boil, and then let simmer for about 10 minutes. Serve hot topped with your favorite cheese or fresh bread.
