Description

This tangy tomato soup with garlic and fresh basil is easy and quick to make. The perfect meal on a cold winter day!

  • 1 tomato, chopped
  • 1/2 medium white onion, coarsely chopped
  • 1 clove of garlic, minced
  • 2 leaves fresh basil, chopped
  • 1 cup tomato-vegetable juice cocktail
  • salt and pepper to taste

Methods/steps

  1. In a food processor or a blender, puree the tomato, onion, garlic, and basil.
  2. Transfer the mixture to a small saucepan, and stir in the vegetable juice. Season to taste with salt and pepper.
  3. Bring to a boil, and then let simmer for about 10 minutes. Serve hot topped with your favorite cheese or fresh bread.

Additional Tips

You can modify this recipe to your own tastes. Try adding mushrooms and bell peppers.
