Description
A colorful medley of bell peppers and mushrooms in a spicy sauce, wrapped in flour tortillas.

4-6 fajitas
- 1 onion
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 1 garlic clove
- 8 ounce mushrooms
- 6 tablespoons vegetable oil
- 2 tablespoons medium chili powder
- salt and freshly ground black pepper
- 4-6 flour tortillas, warmed
Methods/steps
- Slice the onion. Cut the peppers in half, remove the seeds and cut the flesh in to strips. Combine onion and peppers in a bowl. Add the crushed garlic and mix lightly.
- Remove the tough mushroom stalks, and slice mushroom caps. Add to pepper mixture in bowl.
- Mix the oil and chili powder in a cup, and pour over the vegetable mixture and stir well.
- Heat a frying pan or wok until very hot. Add the marinated vegetables and stir-fry over high heat for at least 5-6 minutes, until the mushrooms and peppers are tender. Season with salt and pepper.
- Spoon the filling onto each tortilla and roll up.
