Vegetable Fajitas

Description

A colorful medley of bell peppers and mushrooms in a spicy sauce, wrapped in flour tortillas.

Ingredients

4-6 fajitas
  • 1 onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 garlic clove
  • 8 ounce mushrooms
  • 6 tablespoons vegetable oil
  • 2 tablespoons medium chili powder
  • salt and freshly ground black pepper
  • 4-6 flour tortillas, warmed

Methods/steps

  1. Slice the onion. Cut the peppers in half, remove the seeds and cut the flesh in to strips. Combine onion and peppers in a bowl. Add the crushed garlic and mix lightly.
  2. Remove the tough mushroom stalks, and slice mushroom caps. Add to pepper mixture in bowl.
  3. Mix the oil and chili powder in a cup, and pour over the vegetable mixture and stir well.
  4. Heat a frying pan or wok until very hot. Add the marinated vegetables and stir-fry over high heat for at least 5-6 minutes, until the mushrooms and peppers are tender. Season with salt and pepper.
  5. Spoon the filling onto each tortilla and roll up.

Additional Tips

Serve with your choice of guacamole, sour cream or refried beans!
