Description

Sweet sun-ripened tomatoes are made even more delicious with the addition of feta cheese and olive oil. This simple salad can be enjoyed as a light meal with pieces of crisp bread.

  • 2 pounds tomatoes
  • 7 ounces feta cheese
  • 1/2 cup olive oil, preferably Greek
  • 12 black olives
  • 4 sprigs fresh basil
  • freshly ground black pepper

Methods/steps

  1. Remove the hard cores from the tomatoes with a small knife.
  2. Slice the tomatoes into thick slices and arrange them on a shallow platter.
  3. Crumble the feta cheese over the tomatoes and drizzle with olive oil.
  4. Sprinkle dish with olives and fresh basil. Season with black pepper and serve at room temperature.
