Spinach Avocado Grapefruit Salad

Description

The creamy avocado and tart grapefruit in the refreshing salad are and unusual and surprisingly complementary combination.

  • 5 ounces fresh spinach
  • 1 teaspoon olive oil
  • 1 garlic clove, pressed
  • 1 grapfruit
  • 1 avocado (preferably Hass)
  • salt and freshly ground black pepper

Methods/steps

  1. Stem and rinse the spinach. Spin or gently pat dry. Tear the large leaves into smaller pieces, but keep the small leaves whole.
  2. In a large bowl, mix together the oil and garlic. Add the spinach, and toss well. Set aside.
  3. Peed, seed and section the grapefruit. Halve the avocado, remove the pit, peel, and cut it into 1-inch slices.
  4. In a small bowl, gently mix together the grapefruit and avocado.
  5. Add them to the bowl of spinach. Season with salt and pepper to taste. Toss lightly and serve immediately.
