Spinach Avocado Grapefruit Salad |

Description
The creamy avocado and tart grapefruit in the refreshing salad are and unusual and surprisingly complementary combination.
Ingredients
- 5 ounces fresh spinach
- 1 teaspoon olive oil
- 1 garlic clove, pressed
- 1 grapfruit
- 1 avocado (preferably Hass)
- salt and freshly ground black pepper
Methods/steps
- Stem and rinse the spinach. Spin or gently pat dry. Tear the large leaves into smaller pieces, but keep the small leaves whole.
- In a large bowl, mix together the oil and garlic. Add the spinach, and toss well. Set aside.
- Peed, seed and section the grapefruit. Halve the avocado, remove the pit, peel, and cut it into 1-inch slices.
- In a small bowl, gently mix together the grapefruit and avocado.
- Add them to the bowl of spinach. Season with salt and pepper to taste. Toss lightly and serve immediately.
