Spinach and Nut Pasta

Description

This light pasta dish with spinach, mushrooms and pine nuts in the perfect Sunday lunch.

Ingredients

  • 2 cups dried pasta shapes
  • ½ cup olive oil
  • 2 garlic cloves, crushed
  • 1 onion, quartered and sliced
  • 3 large flat mushrooms, sliced
  • 8 ounces spinach
  • 2 tablespoons pine nuts
  • 6 tablespoons dry white wine
  • salt and freshly ground black pepper
  • Parmesan shavings, to garnish

Methods/steps

  1. Cook the pasta in a saucepan for 8-10 minutes, or until al dente. Drain.
  2. Meanwhile, heat the oil in a large saucepan, and stir-fry the garlic and onion for 1 minute.
  3. Add the sliced mushrooms to the pan and cook over a medium heat for 2 minutes, stirring occasionally.
  4. Lower the heat. Add the spinach to the pan. Cook for 4-5 minutes or until the spinach has wilted, stirring occasionally.
  5. Stir in the pine nuts and wine, season to taste with salt and pepper, and cook for 1 minute.
  6. Toss cooked pasta in the sauce, mixing well. Garnish with shavings of Parmesan cheese.

Additional Tips

For extra flavor, grate a little nutmeg over the dish. Nutmeg mixes deliciously with spinach.
