Description
This light pasta dish with spinach, mushrooms and pine nuts in the perfect Sunday lunch.
Ingredients
- 2 cups dried pasta shapes
- ½ cup olive oil
- 2 garlic cloves, crushed
- 1 onion, quartered and sliced
- 3 large flat mushrooms, sliced
- 8 ounces spinach
- 2 tablespoons pine nuts
- 6 tablespoons dry white wine
- salt and freshly ground black pepper
- Parmesan shavings, to garnish
Methods/steps
- Cook the pasta in a saucepan for 8-10 minutes, or until al dente. Drain.
- Meanwhile, heat the oil in a large saucepan, and stir-fry the garlic and onion for 1 minute.
- Add the sliced mushrooms to the pan and cook over a medium heat for 2 minutes, stirring occasionally.
- Lower the heat. Add the spinach to the pan. Cook for 4-5 minutes or until the spinach has wilted, stirring occasionally.
- Stir in the pine nuts and wine, season to taste with salt and pepper, and cook for 1 minute.
- Toss cooked pasta in the sauce, mixing well. Garnish with shavings of Parmesan cheese.
