Description
These spicy veggie burgers with spinach, mushrooms and tofu can be cooked in a skillet or over a grill!

4 burgers
- 3 ½ ounces spinach
- 1 tablespoon olive oil
- 1 leek, chopped
- 2 garlic cloves, crushed
- 1 ½ cups chopped mushrooms
- 10 ½ ounces firm tofu, chopped
- 1 teaspoon cayenne pepper
- 1 teaspoon curry powder
- 1 tablespoon chopped cilantro
- 1 ½ cups fresh whole wheat breadcrumbs
Methods/steps
- Cook the spinach in a little boiling water for 2 minutes. Drain thoroughly and pat dry with paper towels.
- Heat the oil in a skillet and sauté the leek and garlic for 2-3 minutes.
- Add all the remaining ingredients, except the breadcrumbs, and cook for 5-7 minutes, until the vegetables have softened. Toss in the spinach and cook for 1 minute.
- Transfer the mixture to a food processor and process for 30 seconds, until almost smooth. Transfer to a bowl, stir in the breadcrumbs, mixing well, and leave until cool enough to handle.
- Using floured hands, form the mixture into four equal-sized burgers. Leave to chill for 30 minutes.
- Heat oil in a skillet and cook the burgers for 8-10 minutes, turning once or cook over a grill until heated through.
