These spicy veggie burgers with spinach, mushrooms and tofu can be cooked in a skillet or over a grill!

Ingredients

At a glance
Makes
4 burgers
  • 3 ½ ounces spinach
  • 1 tablespoon olive oil
  • 1 leek, chopped
  • 2 garlic cloves, crushed
  • 1 ½ cups chopped mushrooms
  • 10 ½ ounces firm tofu, chopped
  • 1 teaspoon cayenne pepper
  • 1 teaspoon curry powder
  • 1 tablespoon chopped cilantro
  • 1 ½ cups fresh whole wheat breadcrumbs

Methods/steps

  1. Cook the spinach in a little boiling water for 2 minutes. Drain thoroughly and pat dry with paper towels.
  2. Heat the oil in a skillet and sauté the leek and garlic for 2-3 minutes.
  3. Add all the remaining ingredients, except the breadcrumbs, and cook for 5-7 minutes, until the vegetables have softened. Toss in the spinach and cook for 1 minute.
  4. Transfer the mixture to a food processor and process for 30 seconds, until almost smooth. Transfer to a bowl, stir in the breadcrumbs, mixing well, and leave until cool enough to handle.
  5. Using floured hands, form the mixture into four equal-sized burgers. Leave to chill for 30 minutes.
  6. Heat oil in a skillet and cook the burgers for 8-10 minutes, turning once or cook over a grill until heated through.
