Ingredients

Serves
6
  • 2 tablespoons vegetable oil
  • ¼ cup popping corn
  • ¼ cup butter
  • 1 clove garlic, crushed
  • 1/3 cup unblanched almonds
  • ½ cup unsalted cashew nuts
  • ½ cup unsalted nuts
  • 1 teaspoon vegetarian Worcestershire sauce
  • 1 teaspoon curry powder or paste
  • ¼ teaspoon cayenne pepper
  • 1/3 cup seedless raisins

Methods/steps

  1. Heat oil in a saucepan. Add the popping corn and stir well. Cover and cook over a high heat for 3-5 minutes, holding the saucepan lid firmly and shaking the pant frequently until the popping stops.
  2. Turn the popped corn into a dish, making sure to remove any unpopped kernels.
  3. Melt the butter in a frying pan. Add the garlic, almonds, cashews and peanuts.
  4. Stir in the Worcestershire sauce, curry, and cayenne pepper and cook over medium heat for 2-3 minutes, stirring frequently.
  5. Remove the pan from the heat and stir in the raisins and popped corn.
  6. Season with salt to taste and mix thoroughly. Serve either warm or cold.

Additional Tips

For a less spicy mix, replace the curry powder and cayenne pepper with 1 teaspoon cumin seeds, 1 teaspoon ground coriander and ½ teaspoon paprika.
