Description
This tasty pumpkin stir-fry makes a colorful, oriental main course. The bright orange of the pumpkin and carrot make this dish perfect for autumn dinner parties.
Ingredients
- 3 tablespoons olive oil
- 1/2 cup chopped onion
- 1 clove garlic, crushed
- 4 cups cubed fresh pumpkin
- 1/2 cup grated carrot
- 2 tablespoons soy sauce
- Salt and freshly ground black pepper
- 2 teaspoons black sesame seeds
Methods/steps
- Heat the oil in a large skillet. Sauté the onion and garlic until the onions begin to brown.
- Stir in the pumpkin, carrot, and soy sauce. Season with salt, and pepper to taste.
- Cook another 5 to 7 minutes, until pumpkin is tender.
- Sprinkle with sesame seeds before serving. Serve with rice.
