Description

This tasty pumpkin stir-fry makes a colorful, oriental main course. The bright orange of the pumpkin and carrot make this dish perfect for autumn dinner parties.

  • 3 tablespoons olive oil
  • 1/2 cup chopped onion
  • 1 clove garlic, crushed
  • 4 cups cubed fresh pumpkin
  • 1/2 cup grated carrot
  • 2 tablespoons soy sauce
  • Salt and freshly ground black pepper
  • 2 teaspoons black sesame seeds

Methods/steps

  1. Heat the oil in a large skillet. Sauté the onion and garlic until the onions begin to brown.
  2. Stir in the pumpkin, carrot, and soy sauce. Season with salt, and pepper to taste.
  3. Cook another 5 to 7 minutes, until pumpkin is tender.
  4. Sprinkle with sesame seeds before serving. Serve with rice.
