Description
A vegetarian burger with a hint of pumpkin and a spicy ginger mayonnaise sauce. Serve it at your next cookout to impress even the pickiest meat-eaters!
Ingredients
For the burger: - 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cooking oil
- 1 cup canned beans
- 1/2 cup canned pumpkin
- 1/3 cup quick cooking oats
- 1/4 teaspoon dried sage
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- salt and pepper to taste
For the sauce: - 1/4 cup mayonnaise
- 1/4 teaspoon ground ginger
Methods/steps
- In a large skillet, sauté the onion and garlic in oil until tender. Set aside.
- In a large bowl, mash the beans and stir in the pumpkin, oats, sage, cinnamon, nutmeg, salt and pepper.
- Mix in the cooked onion and garlic. Chill for at least 30 minutes.
- Preheat oven to 350 °F. Shape the chilled bean mixture into four patties. Place on a greased baking sheet.
- Bake in the preheated oven for 25 minutes or until golden brown, turning once halfway through. Or cook in a nonstick skillet for 4 to 6 minutes on each side or until a crispy golden brown.
- For sauce, combine mayonnaise and ginger and spread on burger.
