Potato Bean Salad with Curried Mango Yogurt Dressing

Description

This attractive and filling salad with potatoes and beans is accompanied by a curried mango yogurt dressing. You can find the mango chutney at your local Indian grocer.

Ingredients

  • 3 cups cubed potatoes
  • ¼ red onion, thinly sliced
  • 3 cups cut green beans
  • 2 cups cooked chickpeas (16 ounce can, drained)

For the dressing:

  • 1 cup plain nonfat or low-fat yogurt
  • 3 tablespoons prepared mango chutney
  • 1 ½ teaspoons curry powder
  • 2 teaspoons red onions, finely minced
  • 1 tablespoon fresh lime juice

Methods/steps

  1. In a saucepan, place the potatoes in boiling water and simmer for about 15 minutes, until the potatoes are tender.
  2. Meanwhile, cook the green beans in a saucepan of boiling water, until tender, about 5-10 minutes.
  3. When the potatoes are cooked, drain them and place them in a large bowl. Immediately stir in the red onions.
  4. When the green beans are cooked, drain and add them to the bowl with the potatoes and onions.
  5. Stir in the chickpeas, and set aside to cool.
  6. Meanwhile, in a separate bowl, combine all of the yogurt dressing ingredients. Once the vegetables are cool, stir in the yogurt dressing. Season with salt and pepper to taste. Serve chilled.
