Potato and Mushroom Bake

Description This potato and mushroom bake is the perfect casserole to fill hungry bellies. Use any mixture of mushrooms on hand for this creamy layered bake.

  • 2 tablespoons butter
  • 1 pound 2 ounces waxy potatoes, thinly sliced
  • 2 cups sliced mixed mushrooms
  • 1 tablespoon chopped rosemary
  • 4 tablespoons chopped chives
  • 2 garlic cloves, crushed
  • 2/3 cup heavy cream
  • salt and freshly ground black pepper
  • snipped chives, to garnish

Methods/steps

  1. Preheat oven to 375ºF. Grease a shallow round ovenproof dish with butter.
  2. Parboil the sliced potatoes in a saucepan of boiling water for 10 minutes. Drain well. Layer a quarter the potatoes in the base of the baking dish.
  3. Arrange one-quarter of the mushrooms top of the potatoes and sprinkle with one-quarter of the rosemary, chives, and garlic.
  4. Continue making layers in the same order, finishing with a layer of potatoes on top.
  5. Pour the cream over the top of the potatoes. Season to taste with salt and pepper.
  6. Cook in oven for about 45 minutes, or until the bake is golden brown and very hot. Garnish with snipped chives and serve at once.
