Description

This garbanzo bean salad with carrots, cucumbers and red bell pepper is an attractive dish bursting with flavor.

  • 14 ounce can garbanzo beans
  • 4 carrots
  • 1 bunch scallions
  • 1 medium cucumber
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 3 tablespoons lemon juice
  • 1 red bell pepper, thinly sliced

Methods/steps

  1. Drain the garbanzo beans and place them in a large salad bowl.
  2. Using a sharp knife, thinly slice the carrots. Cut the scallions into small piece. Thickly slice the cucumber and then cut the sliced into quarters.
  3. Add the carrot slices, scallions, and cucumber to the garbanzo beans and mix.
  4. Season to taste with salt and pepper and sprinkle with lemon juice. Toss the salad ingredients together with too large spoons.
  5. Arrange the thinly sliced red pepper on top of the garbanzo bean salad. Serve immediately or chill in the refrigerator.
