Description
This garbanzo bean salad with carrots, cucumbers and red bell pepper is an attractive dish bursting with flavor.
Ingredients
- 14 ounce can garbanzo beans
- 4 carrots
- 1 bunch scallions
- 1 medium cucumber
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 3 tablespoons lemon juice
- 1 red bell pepper, thinly sliced
Methods/steps
- Drain the garbanzo beans and place them in a large salad bowl.
- Using a sharp knife, thinly slice the carrots. Cut the scallions into small piece. Thickly slice the cucumber and then cut the sliced into quarters.
- Add the carrot slices, scallions, and cucumber to the garbanzo beans and mix.
- Season to taste with salt and pepper and sprinkle with lemon juice. Toss the salad ingredients together with too large spoons.
- Arrange the thinly sliced red pepper on top of the garbanzo bean salad. Serve immediately or chill in the refrigerator.
