Description

These flavorful, fried carrot, zucchini and feta cheese patties are full of spices!

  • 2 large carrots, grated
  • 1 large zucchini, grated
  • 1 small onion, diced
  • 2 ounces feta cheese
  • ½ cup all-purpose flour
  • ¼ teaspoon cumin seeds
  • ½ teaspoon poppy seeds
  • 1 teaspoon medium curry powder
  • 1 tablespoon chopped fresh parsley
  • 1 egg, beaten
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • salt and freshly ground black pepper

Methods/steps

  1. Mix the grated carrots, zucchini, diced onion, and feta cheese.
  2. Mix together the flour, cumin seeds, poppy seeds, curry powder, and parsley in a large bowl. Season to taste with salt and pepper.
  3. Add the carrot mixture to the seasoned flour, tossing well to combine. Stir in the beaten egg.
  4. Heat the butter and oil in a large heavy-bottomed skillet. Place heaped tablespoons of the carrot mixture into the pan, flattening them slightly with the back of a spoon.
  5. Fry gently for about 2 minutes on each side, until a crisp and golden brown. Drain on paper towels, and serve immediately.
