Description
These flavorful, fried carrot, zucchini and feta cheese patties are full of spices!
Ingredients
- 2 large carrots, grated
- 1 large zucchini, grated
- 1 small onion, diced
- 2 ounces feta cheese
- ½ cup all-purpose flour
- ¼ teaspoon cumin seeds
- ½ teaspoon poppy seeds
- 1 teaspoon medium curry powder
- 1 tablespoon chopped fresh parsley
- 1 egg, beaten
- 2 tablespoons butter
- 2 tablespoons vegetable oil
- salt and freshly ground black pepper
Methods/steps
- Mix the grated carrots, zucchini, diced onion, and feta cheese.
- Mix together the flour, cumin seeds, poppy seeds, curry powder, and parsley in a large bowl. Season to taste with salt and pepper.
- Add the carrot mixture to the seasoned flour, tossing well to combine. Stir in the beaten egg.
- Heat the butter and oil in a large heavy-bottomed skillet. Place heaped tablespoons of the carrot mixture into the pan, flattening them slightly with the back of a spoon.
- Fry gently for about 2 minutes on each side, until a crisp and golden brown. Drain on paper towels, and serve immediately.
