Deep Fried Cheese and Potato Slices |

Description
Though this dish takes a while to prepare, the delicious potato slices coated in breadcrumbs and cheese are worth the wait.
Ingredients
- 3 large waxy potatoes, unpeeled and thickly sliced
- 1 cup fresh white breadcrumbs
- ½ cup grated Parmesan cheese
- 1 ½ teaspoon cayenne pepper
- 2 eggs, beaten
- oil, for deep frying
Methods/steps
- Cook the sliced potatoes in a pan of boiling water for about 10-15 minutes, or until the potatoes are just tender. Drain.
- Mix the breadcrumbs, cheese and cayenne pepper in a bowl, then transfer to a shallow dish.
- Pour the beaten eggs into a separate shallow dish.
- Dip the potato slices first in the egg and then coat them in breadcrumbs by rolling in the mixture.
- Heat the oil in a large sauce pan or deep-fryer to 350ºF. Cook the coated potato slices in several batches for about 4-5 minutes, or until golden brown.
- Remove cheese and potato slices from oil with a draining spoon and drain thoroughly on paper towels. Serve immediately.
