Deep Fried Cheese and Potato Slices

Description

Though this dish takes a while to prepare, the delicious potato slices coated in breadcrumbs and cheese are worth the wait.

Ingredients

At a glance
  • 3 large waxy potatoes, unpeeled and thickly sliced
  • 1 cup fresh white breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 ½ teaspoon cayenne pepper
  • 2 eggs, beaten
  • oil, for deep frying

Methods/steps

  1. Cook the sliced potatoes in a pan of boiling water for about 10-15 minutes, or until the potatoes are just tender. Drain.
  2. Mix the breadcrumbs, cheese and cayenne pepper in a bowl, then transfer to a shallow dish.
  3. Pour the beaten eggs into a separate shallow dish.
  4. Dip the potato slices first in the egg and then coat them in breadcrumbs by rolling in the mixture.
  5. Heat the oil in a large sauce pan or deep-fryer to 350ºF. Cook the coated potato slices in several batches for about 4-5 minutes, or until golden brown.
  6. Remove cheese and potato slices from oil with a draining spoon and drain thoroughly on paper towels. Serve immediately.

Additional Tips

To save time, coat the potato slices in the breadcrumb mixture in advance and then store in the refrigerator until ready to fry them.
