Description
This curried lentil stew is a hearty dish full of vegetables. It is a great source of protein and fiber!
Ingredients
- ½ cup chopped onion
- 1 ½ - 2 teaspoons curry powder
- 2 teaspoons cooking oil
- 2 cups cubed rutabagas or turnips
- 1 cup sliced carrots
- 1 cup dry lentils, rinsed and drained
- 1 (9 ounce) package frozen cut green beans
- 3 cups vegetable juice
- salt and freshly ground pepper
Methods/steps
- In a large saucepan, sauté the onion and curry powder in hot oil for 3 minutes, stirring occasionally.
- Add 2 ½ cups water, the rutabagas, carrots, lentils, and salt and pepper to taste.
- Bring to a boil; reduce heat. Let simmer, covered, for 15-20 minutes or until vegetables and lentils are almost tender.
- Stir the frozen green beans into the lentil mixture.
- Return to a boil; reduce heat. Simmer, covered for 6-8 minutes more or until vegetables and lentils are tender. Stir in vegetable juice and heat through.
