Description

This crunchy and tart coleslaw is the perfect companion to Indian, Mexican, Mediterranean, Spanish or American food.

Cumin Yogurt Dressing

  • ½ cup nonfat or low-fat yogurt
  • 1 small garlic clove, pressed
  • 1 teaspoon fresh lime or lemon juice
  • ½ teaspoon ground cumin
  • ¼ teaspoon grated red onions
  • pinch of ground cinnamon
  • minced fresh cilantro or mint to garnish
  • salt to taste
Salad
  • 2 cups finely shredded savoy or green cabbage
  • ½ cup finely chopped red or green bell peppers
  • ½ cup finely chopped celery
  • ¼ cup finely chopped red onions

Methods/steps

  1. Whisk together all of the dressing ingredients and set aside
  2. Combine the cabbage, bell peppers, celery, and onions in a large bowl. Add the dressing and toss well.
  3. Chill for at least 15 minutes before serving.

Additional Tips

Prepare the Cumin Yogurt Dressing before chopping the salad so that the dressing has time to develop some depth.
