Black Beans and Rice with Grilled Mango |

Description
The grilled mango complements the black beans and rice perfectly. This dish can be served as a salad or side dish.
Ingredients
- 1 tablespoon olive oil
- 3/4 cup finely chopped onion
- 1 clove garlic, crushed
- 1/2 cup finely chopped green pepper
- 1 cup diced tomatoes
- 1 (15 ounce) can black beans, drained, juices reserved
- 1/2 teaspoon thyme
- 3 tablespoons cider vinegar
- 1/2 teaspoon hot pepper sauce
- 2 cups cooked white rice
To garnish: - Mango, sliced and grilled
- Lime wedges (optional)
Methods/steps
- In large skillet heat olive oil; cook onion, garlic and green pepper until crisp tender.
- Stir in tomatoes, beans, thyme and cook 3 minutes; add vinegar, pepper sauce, and reserved juices from beans. Continue to cook for 5 minutes. Serve over rice.
- Garnish with grilled mango slices and lime wedge.
