Black Beans and Rice with Grilled Mango

Description The grilled mango complements the black beans and rice perfectly. This dish can be served as a salad or side dish.

  • 1 tablespoon olive oil
  • 3/4 cup finely chopped onion
  • 1 clove garlic, crushed
  • 1/2 cup finely chopped green pepper
  • 1 cup diced tomatoes
  • 1 (15 ounce) can black beans, drained, juices reserved
  • 1/2 teaspoon thyme
  • 3 tablespoons cider vinegar
  • 1/2 teaspoon hot pepper sauce
  • 2 cups cooked white rice

To garnish:

  • Mango, sliced and grilled
  • Lime wedges (optional)

Methods/steps

  1. In large skillet heat olive oil; cook onion, garlic and green pepper until crisp tender.
  2. Stir in tomatoes, beans, thyme and cook 3 minutes; add vinegar, pepper sauce, and reserved juices from beans. Continue to cook for 5 minutes. Serve over rice.
  3. Garnish with grilled mango slices and lime wedge.
