Description
This fiery avocado cucumber salsa is a delicious starter for your next Mexican meal.
Ingredients
- 1 small fresh red chili
- 1 tablespoon lemon juice
- 2 large ripe avocados
- 2 inch piece of cucumber
- 2 tomatoes, peeled
- 1 small clove garlic, crushed
- few drops Tabasco sauce
- salt and freshly ground pepper
Methods/steps
- Remove and discard the stem and seeds from the red chili. Chop the flesh very finely and place in large mixing bowl. Add lemon juice to bowl.
- Halve, pit and peel the avocados. Add the flesh to the mixing bowl and mash thoroughly with a fork. The salsa should be slightly chunky (The lemon juice prevents the avocado from turning brown)
- Chop the cucumber and tomatoes finely and add to the avocado mixture with the crushed garlic.
- Stir in the Tabasco sauce and season with salt and pepper. Serve with tortilla chips.
