Avocado Cucumber Salsa

Description

This fiery avocado cucumber salsa is a delicious starter for your next Mexican meal.

Ingredients

  • 1 small fresh red chili
  • 1 tablespoon lemon juice
  • 2 large ripe avocados
  • 2 inch piece of cucumber
  • 2 tomatoes, peeled
  • 1 small clove garlic, crushed
  • few drops Tabasco sauce
  • salt and freshly ground pepper

Methods/steps

  1. Remove and discard the stem and seeds from the red chili. Chop the flesh very finely and place in large mixing bowl. Add lemon juice to bowl.
  2. Halve, pit and peel the avocados. Add the flesh to the mixing bowl and mash thoroughly with a fork. The salsa should be slightly chunky (The lemon juice prevents the avocado from turning brown)
  3. Chop the cucumber and tomatoes finely and add to the avocado mixture with the crushed garlic.
  4. Stir in the Tabasco sauce and season with salt and pepper. Serve with tortilla chips.
